Chipotle lime sauce is a fun flavorful condiment that combines the smoky heat of chipotle peppers with the bright and tangy zing of lime juice. This versatile sauce can be used as a topping, marinade, or dipping sauce. The basic components of chipotle lime sauce include chipotle peppers, lime juice, garlic, salt, and a fat.
For this recipe we use oil olive as our fat component. We also use rendered bacon fat to sauté our veggies in, which and add another level of smokiness. We also opt for dried chipotle peppers instead of the store bought chipotle peppers in adobo sauce. This takes a little more effort but it allows for a more unique and authentic flavor.
Chipotle Lime Sauce Ingredients
Here’s what you’ll need to make this recipe. You should be able to find everything at your local supermarket. Nothing crazy here.
- Limes: It’s chipotle LIME sauce after all. You’ll need the juice of about two limes. You could by bottled lime juice, but I find that it can be too strong, or sometimes there are unwanted preservatives. If you do buy bottled lime juice, I suggest Santa Cruz brand.
- Dried Chipotle peppers: Look in the hispanic aisle of your grocery store, there should be a section of dried peppers.
- Olive Oil: Extra Virgin or not.
- Rendered Bacon Fat: Brings another level of smoky goodness, but not crucial if you don’t have any.
- Jalapeño: Chipotle peppers ARE dried jalapeño peppers, seems fitting right?
- Shallot: Sauté in the bacon fat.
- Garlic: Normally the star flavor in dishes, but only a back up for this recipe, but would Jordan have won all those championships without Pippen?
- Spices: Salt, Black Pepper, and Ground Cumin.
Equipment You’ll Need to Make Chipotle Lime Sauce
Here’s a list of everything you’ll need to make this recipe. You should already have this stuff in your kitchen.
- Mixing Bowl: You’ll need a heat proof bowl to rehydrate your chipotle peppers in with boiling water.
- Food Processor: A food processor is key to getting this sauce super creamy. The dried peppers have a leather like texture after being rehydrated and you really can’t blend everything properly without one.
- Jar/Air Tight Container: This recipe makes a little more than a cup of sauce, which would be a lot for one sitting. Make sure you store the rest properly so you can enjoy it for the next couple weeks.
- Spatula: This sauce is liquid gold, leave no dollop behind. Use a rubber spatula to scrape every last bit of sauce into its storage container.
How to Make Chipotle Lime Sauce
Follow these step by step instructions to make this chipotle lime sauce recipe. It should only take your a little over half an hour to make, and thats only because it takes 25-30 minutes for the peppers to rehydrate.
Step 1: Rehydrate Chipotle Peppers
Place chipotle peppers in a small heatproof bowl and pour boiling water over the peppers. Make sure they are fully submerged. Soak for 25-30 minutes.
Once the peppers are rehydrated and more malleable remove the stems and seeds. Roughly chop and set aside. Reserve the chili water.
Step 2: Sauté Shallot, Jalapeno, & Garlic
In a small skillet, heat a tablespoon of rendered bacon fat over medium high heat. Season with salt, black pepper, and ground cumin. Sauté until almost crispy, but not burnt. Set aside.
*If you don’t have any bacon fat, olive oil is fine.
Step 3: Combine & Pulse
Place the rehydrated chipotle peppers, lime juice, olive oil, and sautéed garlic, jalapeños, and shallots in a food processor. Pulse to combine, adding some of the reserved chili water to thin if needed.
Step 4: Taste & Transfer
Taste the mixture and add more lime juice or salt, depending on your preferences. Transfer to an air tight container and store in the fridge, or use immediately.
Storing Chipotle Lime Sauce
Store your chipotle lime sauce in a clean, airtight container in the refrigerator. It’ll be good for a couple weeks.
I don’t recommend freezing. The ingredients tend to separate after thawing, and the water and ice crystals that form during freezing can change the texture of the sauce making it kind of weird.
How to Use Chipotle Lime Sauce
This sauce is super versatile. It can be used on just about anything that will eventually end up in your mouth hole. Dip your pizza or chicken nuggets into it. Use it as a dressing on a Cobb or taco salad.
It’s great on sandwiches too. The sauce is on the thicker side so it spreads on sandwich bread nicely. It really makes a cold cut pop! Or use this chipotle lime sauce my favorite way, slather it on your fried eggs!
