WTF are Home Fries?
Simply put, home fries are breakfast French fries. They’re diced or cubed potatoes served at breakfast. Traditionally they are salted in a skillet with oil or butter, but we’re using coconut oil for this recipe!
Country potatoes, peasant potatoes, house fries, or as the German call them Bratkartoffeln. There are just as many ways to cook them as there are ways to name them.
Sauté them with mushrooms or bell peppers. Throw in some protein like breakfast sausage or venison. Use whatever ingredients you like.
This home fries recipe feels more like a side dish for dinner than a breakfast potato, but you could absolutely still serve these at breakfast. Curry powder, cumin, and fresh herbs are tossed with the potatoes for a really fun take on home fries.
Best Sweet Potatoes for Home Fries
There are a ton of sweet potato varieties out there and they aren’t all great for baking. The general rule of thumb is to use red or orange sweet potatoes. They’re considered the moist varieties of sweet potatoes.
Garnet sweet potatoes is what we use in this recipe and they are fantastic. They have a deep orange color and their flesh is sweet.
Jewl sweet potatoes are also a great option for home fries. They have a slightly firmer texture than the garnets. Both Garnet and Jewl potatoes are rich in the enzyme amylase that turns starches into sugars, making them super sweet and creamy. Yum
On the other end of the sweet potato spectrum we have your Sweet Hannah, Japanese, and Purple potatoes. These are higher in starch and will be a lot drier when baked. Which is fine, if you’re into that sort of thing.

SWEET POTATO HOME FRIES
Ingredients for Sweet Potato Home Fries
Here’s what you’ll need to make these sweet potato home fries:
- Sweet Potatoes: Use Garnet or Jewl sweet potatoes. They’re bake nicely and come out really sweet and creamy.
- Shallot: I use half a shallot for this recipe, but feel free to use an onion.
- Oil: We use coconut oil, but olive oil will work fine.
- Herbs: Minced rosemary is tossed with the potatoes as they cook and I garnish the finished potatoes with freshly chopped parsley.
- Spices: Cumin, Curry Powder, salt, and pepper.
- Cornstarch: I like to use about one tablespoon of cornstarch per potato, it’ll really help to crisp up those potatoes.
- Yogurt: Use plain greek yogurt, smoked paprika, and lime juice to make the tangy yogurt sauce.
How to Make Sweet Potato Home Fries
Follow these step by step instructions to make sweet potato home fries:
Step 1: Combine Ingredients
Preheat your oven to 400F degrees. Scrub, peel, and dice sweet potatoes into 1/2 inch chunks. I like to leave some of the skin on my sweet potatoes, but you can take it all off if you prefer it that way.
In a large mixing bowl, combine sweet potatoes, shallot, coconut oil, minced rosemary, curry powder, cumin, salt, and black pepper. Mix to evenly coat the potatoes.
Step 2: Bake Sweet Potato Home Fries
Transfer the seasoned potatoes to a large baking sheet. Bake at 400F degrees for 25-30 minutes. At the halfway mark, use a spatula to flip the potatoes.
Sometimes I’ll crank up the oven to 425 during the last few minutes to really help them crisp up. Bake to your desired crispiness.
Step 3: Make the Tangy Yogurt
While the potatoes bake, make the tangy yogurt sauce. In a small mixing bowl, combine 1/3 cup plain greek yogurt, 2 Tbsp fresh squeezed lime juice, 1/2 tsp smoked paprika, and 1/2 tsp salt. Mix thoroughly.
Step 4: Garnish & Serve
Remove from oven and transfer the potatoes to a serving dish. Garnish with chopped fresh parsley and serve with the tangy yogurt.
Air Fryer Sweet Potato Home Fries
You can also cook these sweet potato home fries in the air fryer! It’s super easy, just blast em at 400F degrees for 20-22 minutes. Take them out at the halfway mark and give em a good toss so they cook evenly.

Storing Sweet Potato Home Fries
Got some leftover sweet potato home fries? Well then you’re probablly serving emaciated ingrates! OR maybe you went all out and served them alongside bacon, eggs, fruit, toast, and pancakes. Which rendered leftovers, and reasonable so.
Either way, just toss the leftover sweet potato home fries in an air tight container and keep them in the fridge. They should be fine for 3-4 days. Just zap pop them in the oven at 425F degrees for 3-5 minutes to reheat them.
What to Serve with Sweet Potato Home Fries
If you’re making these sweet potato home fries for breakfast then you could serve them along side chicken fried steak, or simply bacon and eggs. Cook your eggs over easy so you can sop up the yolk with the potatoes.
These home fries are so unique and savoy I think they’re almost better as a side dish at dinner. They would go great with a roast or a curried chicken dish.
